Radish + Apple Salad

Spring radishes will be coming into season anytime now in the Keweenaw. Seed-to-plate in under a month, they’re a favorite in any garden. This salad was inspired by Brooks Reitz (@brooksreitz) and his “Brooks Cooks” IG video series. Check them out! The recipes are simple, seasonal, and delicious—the very best kind (IMHO).

Recipe: Radish + Apple Salad (serves 1 large salad, could easily be shared by 2)

  • 3 small radishes (globe/round) - halved & thinly sliced

  • 1 honeycrisp apple - halved & thinly sliced

  • 1 stalk of celery - thinly sliced

  • Handful of walnut pieces

  • EVOO

  • Coarse sea salt

  • Bunch of fresh arugula

  • Shaved parmesan cheese

  • A generous pinch of fresh herbs - minced (tarragon, thyme, or parsley would work well)

Assemble the salad by building a bed of arugula on the bottom of the plate. Layer in sliced apples, radishes, and celery. Drizzle with EVOO (2 glugs) and a generous pinch of sea salt. Top with shaved parmesan, walnuts, and fresh herbs (I used tarragon from the garden).
